Modern Literature Art Project?

For AP English, I have to do a project in which I create a piece of art that represents or relates to a piece of modern literature, either a novel, short story, or a poem. The key is creativity, not artistic ability. The problem is, I'm having so trouble coming up with a good idea. I was thinking about doing it on either the Great Gatsby or "The Road Not Taken" by Robert Frost but I'm definitely open to new ideas. Help would be greatly appreciated!!!! Thank you SO much!
